Smothered Pork Chops with Onions and Cheddar Grits...and some Bacon Wrapped Potatoes!

I found this recipe on My Recipes.com and drooled over the sound of the title! I love everything about it...pork chops smothered with onions and served with cheddar grits?!?! The ingredients were so simple and this was so easy to make! The only change I made was to cook the onions til they were very dark and caramelized! I also added chopped,  jarred,  jalapeno to the grits! I served this with some bacon wrapped oven roasted potatoes too! Yes, I'm a carbaholic and loved every single bite of this delicious meal!

Easy Tortellini Salad

Easy Tortellini Salad, My Recipe Journey,
This is my recipe for Tortellini Salad. I make it often for family gatherings. There is usually never any leftovers! I always use dried tortellini pasta...never frozen because the frozen kind are too gummy when cooked. And grocery stores don't usually have much choice of fillings for the frozen variety.  For this recipe I always use spinach/cheese filled and 3 cheese filled. This really makes a huge difference in the taste of this salad. And I always use my own homemade dressing because it's simple and light, which lets the flavor of the other ingredients shine through. I hope you'll give my recipe a try!

This is a delicious and easy soup! What is so great about this soup is not only the authentic Mexican flavors but that it can be made and ready to serve in less than an hour! Here is the link to that recipe...

Corn Fritters

Corn Fritters

This is one of my favorite Thanksgiving side dishes! I make it just about every year, but sometimes I use onions instead of corn. You can really substitute any kind of veggie for the corn!

Crispy Oven Roasted Parmesan Potatoes

Crispy Oven Roasted Parmesan Potatoes

Baked Eggplant and Tomato Stacks

Baked Eggplant and Tomato Stacks

I decided to give this a try because I had an extra eggplant leftover from a previous recipe. This reminds me of a lighter and fresher version of eggplant parmesan. Much quicker to make and a whole lot healthier because it doesn't contain breadcrumbs and tons of cheese.

Orzo Veggie Bake

Orzo Veggie Bake

I've been eating way too much meat lately, so I started hunting for recipes that only contained vegetables. Well, in this case, vegetables and pasta. I knew that I also wanted an easy recipe. This was all of those things! I love that I didn't need to pre-cook the pasta. I was able to make this main dish using only a large oven safe nonstick skillet and a baking sheet to roast the veggies.

Classic Stuffing

Classic Stuffing

I know Thanksgiving has come and gone but stuffing is great any day of the year! I make this as a side dish to chicken, pork chops, ham and even fish! This can also be used as a layer for so many different kinds of savory casseroles! So don't just think of stuffing as a Thanksgiving food! Try it for your everyday meals also!

3 Cheese Noodle Pudding

3 Cheese Noodle Pudding

Sometimes I just get tired of the same old vegetable side dishes. I usually always serve peas, green beans or potatoes as a side to meat or fish. But that just gets so boring! So that's when I go looking for something that I can serve with meat but that does not contain veggies. This next recipe was just what I needed! This could also easily be served as a main dish! And I love the fact that this side dish tastes just as good cold as it does warm!

Grilled Potatoes

Grilled Potatoes

Potatoes on the grill are so easy and so very good! I love the smoky flavor and it's so much quicker than baking them in the oven! Plus, who wants to turn on the oven for an hour and heat up the kitchen on hot summer days!

Thai Satay Udon Noodles!

Thai Satay Udon Noodles!

My blogger friend Judith from The Midnight Baker food blog, gave me a few packages of Udon noodles. Judith is always making such delicious Asian recipes! She makes me crave this stuff! I decided to go looking for a recipe that I know my hubby will love! He's a Thai food junkie so I figured that's a great place to start.

Sweet and Spicy Green Bean Bundles!

Sweet and Spicy Green Bean Bundles!

I'm always on the lookout for new and interesting veggie side dishes! This one caught my eye because of the presentation! But the original recipe kind of scared me because it contained a pound of bacon and a cup of butter! There was no way I was making the recipe that way!

Tikka Masala Oven Fries!

coated and ready for the oven
I just LOVE Chicken Tikka Masala! So why not make an Oven Fries version! I'm always looking for new and unique potato recipes, so this was a no brainer!
